As the sun continues to shine, people switch from soup to salad as it’s refreshing to eat under the warm sun! An inspiration for a spring meal is this vietnamese rice noodle salad with honey garlic chicken. It is easy to make, tasty to eat and unforgettable!
In order to make this you will need
- chicken breast
- rice noodle
- fish sauce
- coriander (optional)
- salt and pepper
First. Cut all of your necessary ingredients as indicated in the picture. Carrots,cucumber, lettuce should be in slices and garlic should be chopped into small pieces. The chicken breast should be cut into small to medium sized cube strips.
Second. Boil water and cook the rice noodle with a little salt for two minutes in a pot.
Third. Drain the water from the rice noodle and fill the pot with some cold water so the noodle doesn’t stick together.
Four. Cook the chicken in low to medium heat in a pan and season with salt, pepper and garlic. When it is cooked half way add a tablespoon of fish oil, tablespoon of honey and a squeeze of lime. Cook chicken until fully white in the inside.
Five. Rinse out all of the water from the rice noodle and place it onto a plate or bowl. Place lettuce on top of it, and place your cucumbers and carrots. Then add your chicken and coriander (optional). Finally drizzle some fish sauce everywhere, a little honey and lime sauce.
