Spring Dessert, Mango Sticky Rice

Spring time is here or almost here depending on where you live! Spring calls for flowers blossoming, increasing time spent outside and more happiness since the sun will be shining more brightly than the short winter days.

To celebrate to this new season, LiuLiveEat has created a Thai dessert, Mango Sticky Rice. This is a special dish and if you have never heard of it, this dessert is a combination of savoury and sweet. The sticky rice has little saltiness to it, yet the coconut milk on top of it gives it a rich, sweet, creamy flavourful texture. And mango is always delicious to begin with if you like it! Mango is a tropical food so it’s best during warmer seasons so what better to eat when celebrating the beginning of spring! (since Summer is still some time from now)

First of all, to create this lovely dessert you will need:

  • one mango
  • sticky rice
  • a can of coconut milk
  • sugar
  • salt
  • cornstarch
  • sesame seeds (optional)

Step 1. Soak half a cup of sticky rice (per person) for one hour. And then pour out the water.

Step 2. Pour the sticky rice into a pot for cooking and add half a cup of water and boil in medium heat for 15 to 20 minutes with a lid on covering of the pot (leave a small opening so the water does not overflow)

Step 3. While the rice is cooking, pour half a cup of coconut milk (per person) into a small pan with a tablespoon of sugar and one fourth teaspoon of salt. Heat the pan in low heat until it starts to becomes slightly warm. When the sticky rice is done cooking, pour this coconut milk into the sticky rice and steam it for one extra minute and let it cool.

Step 4. Take one tablespoon of cornstarch and mix it with a little water.

Step 4. Take one fourth of extra coconut milk from the can and pour it into a cup (per person) Mix this with one tablespoon of sugar, one fifth atablespoon of salt and the cornstarch until the coconut milk becomes thicker.

Step 5. Cut the mango! Cut a little of the bottom so it can stand up straight and start cutting off all of the skin. Then cut the two sides of the mango off leaving the seed in the middle. Cut the mango up into long slices.

Step 6. Now place the sticky rice on a plate, pour the coconut milk on top (optional-  and sesame seeds on top)  of the rice and place the mango on the side!

Step 7. Enjoy! You need eat the sticky rice with the coconut milk and the mango all together!

If it is your first time, it might take a couple of bites to get use to! And once you are, it is a nice unique dessert!
